This month instead of Book or Movie recommendations, we in the Library thought you might enjoy some recipes that never fail in warming our spirits.  We know this year is tough, but we also have some options on how you can spend time with your friends and family without leaving the comfort of your own home.

I usually return home for the holidays. Instead of having my mom’s cooking, I decided to try some of her recipes at home and boy, they didn’t disappoint! While I won’t share all of her recipes here (She wouldn’t be happy about that!) I do have a couple of my favorite that I love to bring to potlucks and am happy to share the recipe for!

I know how hard it is to be away from those you care about during the holidays. Setting up a virtual game online can be easy and a great way to still have fun with your family, without the risk. 

Butternut Squash Brownies

Don’t let the title fool you! These brownies are delicious, easy to make (only 6 ingredients!) and are a crowd favorite. They can also be made to be completely vegan! These are a crowd pleaser and even the pickiest of eaters have no idea they are having a healthy alternative to a classic dessert. This recipes calls for a particular nut butter, but any type of nut butter is fine and tastes just as good! 

Pomegranat Salad

Pomegranates are my favorite fruit, and I always am excited when their season comes around! This salad is fresh and delicious, and doesn’t require a lot of fuss. If you enjoy a little crunch in your salad and are feeling adventurous, try this one! 

Virtual Games (Among Us)

Among Us is a perfect way to play with family and friends virtually this year! This game can have up to 10 people playing all at once, so all your family can join! Enjoy a great ‘who dun it’ game all from the safety of your own home.

Although I have never really celebrated thanksgiving, I do think having a day to unwind and be grateful for the people in our lives is something good to celebrate. If bomb food is included then its even better!!! Here are some delicious foods you all can check out and maybe even incorporate in your own thanksgiving!

Champurrado

Champurrado is a traditional thick chocolate beverage that I think is amazing to have during the winter. You can also add many ingredients to champurrado depending on how you like it. Vanilla , Cinnamon and nuts are some you can add.

Arroz con Leche

Arroz con Leche is made from rice, water and milk and is very simple to make and tastes amazing (in my opinion)

Enchiladas

enchiladas  is a tortilla with sauce you can add meat, cheese, beans, potatoes and vegetables to. You can make the sauce yourself or you can also buy it at the store lol. My fav are home made red enchiladas con longaniza although I also really like green enchiladas to. The great thing is that you can mix it up with the type of things you like.

Thanksgiving Day is our annual holiday celebrating the harvest and other blessings of the past year. In addition, it is also a reminder of the democide and continued suffering of the Native American peoples. We should be healing the wounds by spreading peace and joy to all people and helping the less fortunate in any way, shape, or form, especially during this time.

I know this year has been a rough one for all of us, but I will be making food for my family, playing some online games with friends, and donating to some local charities since many people are struggling during this time. Salads can be very boring, (which I frankly don’t mind) but if you need a new way to eat salads, then just add sweet potatoes! Sweet potatoes are highly nutritious and promote gut health, plus they are very fulfilling. Try the recipe!
